To Tofu or Not to Tofu

Tofu is something that turns up in many Asian dishes. When the word tofu is spoken, I generally get one three reactions:

1. What is a tofu?
2. Yuck
3. I like tofu.

My husband and I are in the third category and my mother is in the second category. So, you know my fondness for tofu is not because I grew up with it. We started eating tofu about five years ago. We’ve discovered that firm tofu can replace almost any meat (if done right). We have tofu tacos, tofu goulash, tofu stir fry… Even better, my son loves tofu.

What is tofu? – Tofu is a processed curd made from soybeans. (See, nothing scary.)

Why eat tofu? – It is a healthy alternative. There is a lot less fat and it provides protein to non-meat meals. I don’t eat much meat so tofu is a good addition for me.

What does tofu look like? Tofu is generally in white blocks and often packaged in water. Tofu is generally labeled as soft, silken or firm. Sometimes, we also find extra firm.

My husband and I favor extra firm because of how we use it, but many people like the softer versions because it can be stirred right into mixtures (soups, casseroles, etc…). I haven't been brave enough to try it this way. Mostly because it seems like a lot of work, but I'm told that it's good for you.
