Making Kimchi

I like kimchi. It’s definitely an acquired taste. My husband eats it, but he wouldn’t choose it and my son thinks it’s something I thought up to punish him with. The face he made the first time he tried it was priceless.

Whenever I’m at a Korean event or restaurant, I take the opportunity to eat it, but I’ve never considered making it at home. Of course, anyone who has read this blog for awhile knows my general opinion of cooking. Thankfully, if I ever truly want to bring it into my home, many Asian food markets carry it pre-made. I love the modern world.

Anyhow, I was checking out the Green Fertility blog. Even though I’m not that concerned about fertility, I like to check in to see what Marie Lee has to say. I enjoy her wit and opinions. Also, she happens to be Korean American so occasionally I learn something new to share here. I came across the following post about kimchi instructions.

My favorite part of the recipe is the hot pepper. I love hot red pepper. Go figure. I probably won’t be able to try this myself because I have a real phobia against food sitting out. It’s a lot like paranoia. Somehow, if someone else makes it and I don’t see it sitting out, I’m fine. Go figure.

I have that same paranoia of food...but mine also extends into expiration dates. I never eat food past the expiration date, and often will toss it the day before. That is a result of eating yogurt once that made me very sick.

I've only ever eaten tiny pices of kimchi, I cannot tolerate the spices. I have heard that the cucumber kimchi isn't so spicy though.

I had some kimchi in China, (believe it or not) that I really liked, but the stuff available here at the Asian markets looks and smells to me like a dead animal crawled in the jar! My 11 year old son recently home from China loves the stuff. My friend who used to live in Taiwan said some of the people there would make it and bury in an earthen jar in the ground for a year...think I'll pass on that one!

The earthen jars are the traditional way and still widely used. :)

You can actually get very mild kimchi in many places. Many restaurants have "Americanized" it so that it doesn't drive people away. Though I like it very hot, many people don't.

I actually like the taste of kimchi too (the hotter, the better!). It's the texture that sneaks up on me! Something about "cold" and "spicy" just doesn't go together!! :)
